Mmm, dinner

I was so hungry when I got home I was hoping that Steve would call and say he was picking something up. Too bad I didn't put that out into the cosmos earlier in the day because he was nearly home when I called. I decided to make the first few things that were I saw in the fridge.

The first was left over salad from the day before, not really worth showing you here. The second was asparagus. The trimmed asparagus was placed in a pan of water with about 2 tablespoons of butter, pepper and some lemon juice. I cook this until the color becomes a rich green. I don't know what it is about cooking it this way but I usually eat a couple before serving it to anyone. It is so good!


The second item was a little experiment. I took some frozen hash browns and baked them at 450 degrees for 18-20 minutes. Then I whisked 12 eggs with 2 cups of sharp cheddar and pepper. I had some frozen breakfast turkey sausage which I sauteed with green onion. Once I realized that wouldn't be enough I took the Aidell's sausage I had left over from a barbecue on Saturday and sliced that up as well. This was all mixed together and poured over the hash browns.

It was pretty good, but not as flavorful as I thought it would be. It needs more onion and some green pepper in the mix. I added a side of salsa and it definitely made all the difference. Now I have leftovers for the week.

Delicious Dinner

The new issue of Vegetarian Times showed up a few days ago and I decided to try a few of their recipes tonight. The first was Hawaiian-style Sweet-and-Sour Roasted Pineapple and Bell Peppers. I grabbed the pre-cubed pineapple pieces from the grocery store to save some time.



I roasted this for 30 minutes. With the following result.

The smell is amazing! I was a little worried that Steve wouldn't like it because it would be too sweet. I had mine with brown rice and Steve had his with some sort of curry rice he had made a few days ago. It was great! I would recommend this to anyone who is not opposed to a vegetarian meal.

The second item was a strawberry cobbler. I don't know how I could have another bite after the pineapple and peppers, but it was worth it. This was really easy to make and the majority of time was spent in the oven (always a plus for me).

I got a prezzy!

Recently my friend, Tina, asked for my address again because she
"lost" it. It was all a ruse to send me a fabulous necklace! Hooray!

Now I'm just outside showing it off to the neighbors.

Super Fun Birthday Party


Sophia was invited to a birthday party for Emily (cute girl from daycare) and it was a great party. The theme was Spongebob and the entertainment were some fuzzy and not so fuzzy animals.

Wild Things brought a bunny, snake, hedgehog, dove and lizard. The kids loved it. Everyone got a chance to pet the animals or shriek in terror.
